Celeriac, Boldly Grown Farm, Bow, WA - Also known as celery root, this weird-looking vegetable can be used the same as any tuber: mashed, roasted, even hasselbacked!

Purple Sprouting Broccoli, Cabrera Farms, Mount Vernon, WA - Similar to raab, PSB is an early spring delicacy with a sweet and nutty flavor. The purple fades when cooked; try it boiled, steamed, stir-fried, griddled, roasted, or even air-fried!
