Chioggia Beets, Boldly Grown Farm, Bow, WA - Also known as candy-striped beets, this heirloom variety is slightly milder and sweeter than red beets. Perfect for roasting, pickling, or grating raw into salads.

Castelfranco Radicchio, Boldly Grown Farm, Bow, WA - Castelfranco radicchio is a real treat, the most mild member of the radicchio family. These beautiful cone-shaped dense heads, feature blanched hearts with purple and red speckles. Excellent used fresh for winter salads, wilted gently, or even seared or grilled.

Carrots, Farias Farm, Burlington, WA - Crisp, sweet, and full of flavor, these carrots are great for snacking, roasting, or adding a pop of color to your favorite dishes.

Purple Kohlrabi, The Crows Farm, Mount Vernon, WA - With a flavor somewhere between radish and broccoli, this quirky-looking veggie has a mild, slightly sweet crunch that’s great raw in slaws or roasted until caramelized.

Leeks, Ralph’s Greenhouse, Mount Vernon, WA - A milder cousin of onion and garlic, leeks add a sweet, oniony flavor that give depth to any meal. Use them anywhere you’d use alliums, or try them on their own! Save the dark leafy tops for use in homemade stock.

Yellow Potatoes, First Cut Farms, Mount Vernon, WA - Boil ‘em, mash ‘em, put ‘em in a stew… my favorite is to chop, boil until fork-tender, and sautee in a breakfast hash or bake until beautifully golden. Crispy on the outside and creamy on the inside, this is a perfect potato!

Honey Boat Delicata Squash, Hedlin’s Family Farm, La Conner, WA - This squash is known for being naturally sweet, mild, and creamy. The squash has a thin, edible skin, making it easy to cook!

Orin Apples, Bellewood Farms, Lynden, WA - Juicy and sweet, this apple is described as tasting pear-like with hints of pineapple. Great for snacking or in salads.

Cosmic Crisp Apples - Bellewood Farms, Lynden, WA - A mix between Honeycrisp and Enterprise, Cosmic Crisp is simply a win of an apple! It has great texture, flavor, sweetness, and juiciness, is disease-resistant, and the trees bear fruit annually (as opposed to alternate years, as with Honeycrisps).
