Celeriac, Boldly Grown Farm, Bow, WA - Also known as celery root, this weird-looking vegetable can be used the same as any tuber: mashed, roasted, even hasselbacked!
Microgreens, Grace Harbor Farms, Custer, WA - Here we go, winter greens! These can be used on sandwiches, pesto, spring rolls, salads, stir fry, shakes, soups, and more.
Yellow Potatoes, Hayton Farms, Mount Vernon, WA - Boil ‘em, mash ‘em, put ‘em in a stew… my favorite is to chop, boil until fork-tender, and sautee in a breakfast hash or bake until beautifully golden. Crispy on the outside and creamy on the inside, this is a perfect potato!
Honeyboat Delicata Squash, Hedlin’s Family Farm, La Conner, WA - This squash is known for being naturally sweet, mild, and creamy. The squash has a thin, edible skin, making it easy to cook!
Yellow Onions, Hopewell Farms, Everson, WA - A staple in the kitchen, the yellow onion is perfect for French onion soup, caramelizing, or adding to just about any dish.
Leeks, Ralph’s Greenhouse, Mount Vernon, WA - A milder cousin of onion and garlic, leeks add a sweet, oniony flavor that give depth to any meal. Use them anywhere you’d use alliums, or try them on their own! Save the dark leafy tops for use in homemade stock.
Brussels Sprouts, Regino Farms, Burlington, WA - With a taste somewhere between cabbage and asparagus, this fall staple is great when roasted or sautéed.
Rosemary, The Crows Farm, Mount Vernon, WA - This tasty herb can be used just about anywhere — meat dishes, bean stew, mixed with butter, mashed potatoes, focaccia, infused with salt, as a mixer for cocktails — you are the good fairy of your rosemary!
