Parsley, Hedlin Farm, Mount Vernon, WA: This versatile herb has great flavor and a pleasant texture. Try making a chimichurri, tabbouleh, or use as a garnish on just about any dish.
Patty Pan Squash, Pure Nelida, Mount Vernon, WA: These sunny, scalloped squash are as fun to cook as they are to look at! Try them grilled, stuffed, or sautéed with herbs and a squeeze of lemon.
Carrots, Well Fed Farms, Bow, WA: Crisp, sweet, and full of flavor, carrots are great for snacking, roasting, or adding a pop of color to your favorite dishes.
Fennel, Ralph’s Greenhouse, Mount Vernon, WA: A farmer’s favorite, this veggie has a very mild anise flavor. The entire thing can be eaten raw, sauteed, roasted, or in soups. Thinly slice the bulb and marinate in a vinaigrette before tossing in a salad, sauté it for a pasta accompaniment, or roast wedges for a side dish.
Rainbow Swiss Chard, Westwind Organics, Carnation, WA: Vibrant and tender, rainbow chard adds a splash of color and a mild, earthy flavor to sautés, soups, or fresh salads. Don’t toss the stems—they’re delicious too!
Yellow New Potatoes, First Cut Farms, Mount Vernon, WA: These true new potatoes have thin, very delicate skins and a rich, creamy texture. They cook quickly and are ideal for potato salad, steaming, or roasting. A short-season specialty!
Green Bell Pepper, Spring Time Farm, Everson, WA: Less ripe and milder than the red bell pepper, these are crisp, bitter, sweet, and slightly grassy.
Kohlrabi, The Crows Farm, Bow, WA: With a flavor somewhere between radish and broccoli, this quirky-looking veggie has a mild, slightly sweet crunch that’s great raw in slaws or roasted until caramelized.
