IN THIS WEEK’S FARM BOX:
Leeks, Spring Time Farm, Everson, WA: A milder cousin of onion and garlic, leeks add a sweet, oniony flavor that give depth to any meal. Use them anywhere you’d use alliums, or try them on their own! Save the dark leafy tops for use in homemade stock.
Beets, Ralph’s Greenhouse, Mount Vernon, WA: Earthy and naturally sweet, red beets shine roasted, pickled, or blended into vibrant soups.
Carrots, Westwind Organics, Carnation, WA: Crisp, sweet, and full of flavor, these carrots are great for snacking, roasting, or adding a pop of color to your favorite dishes.
Purple Kohlrabi, The Crows Farm, Bow, WA: With a flavor somewhere between radish and broccoli, this quirky-looking veggie has a mild, slightly sweet crunch that’s great raw in slaws or roasted until caramelized.
Mini Spaghetti Squash, The Crows Farm, Bow, WA: This squash is a great gluten-free alternative to spaghetti. Cut in half, scoop out the seeds, poke holes in the skin, roast, then use a fork to fluff the strands and add your favorite sauce.
Yellow Potatoes, First Cut Farm, Mount Vernon, WA: Crispy on the outside and creamy on the inside, this is a perfect potato!
Collard Greens, Boldly Grown Farm, Mount Vernon, WA. These hearty, nutrient-rich leaves are delicious braised, sautéed, or added to soups. Their earthy flavor pairs especially well with garlic, vinegar, or smoky spices.
Poblano Peppers, Caruso Farms & Boldly Grown Farms: Poblanos are a mild chili pepper with a slightly earthy and sweet taste. Try stuffing them, or using in place of a bell pepper!
