Red Beets - Boldly Grown Farm, Bow, WA - Earthy and naturally sweet, red beets shine roasted, shaved raw into slaws, or blended into vibrant soups.

Daikon Radish - Caruso Farms, Snohomish, WA - These have the same texture and crunch as a red radish, but with a mellower flavor. Can be eaten raw or cooked.

Sweet Bell Peppers - Hedlin Farm, La Conner, WA - Crisp, crunchy, and sweet, these can be enjoyed raw in salads or as a dipping vessel, or sauteed, or roasted.

Table Carrots - Hopewell Farm, Everson, WA - Crisp, sweet, and full of flavor, these freshly pulled carrots are great for snacking, roasting, or adding a pop of color to your favorite dishes.

Fennel - Ralph’s Greenhouse, Mount Vernon, WA - A farmer’s favorite, this veggie has a very mild anise flavor. The entire thing can be eaten raw, sauteed, roasted, or in soups. Thinly slice the bulb and marinate in a vinaigrette before tossing in a salad, sauté it for a pasta accompaniment, or roast wedges for a side dish. Don’t toss the tops — chop ‘em up for an aromatic garnish!

Tokyo Bekana Cabbage - Spring Time Farm, Everson, WA - A tender, frilly green with mild sweetness and a hint of crunch. It’s the perfect bridge between the heft of cabbage and the lightness of lettuce. Great stir-fried, sauteed, or steamed.

Mixed Radicchio - The Crows Farm, Mount Vernon, WA - With its compact, maroon leaves, radicchio provides a unique flavor that is bold, delightfully bitter, and slightly spicy. Add it raw to a salad with mild and sweet fixings to complement its bitter notes, or try it cooked to create a mellow and pleasant, yet complex, flavor profile.

Baby Bok Choy - Westwind Organics, Carnation, WA - Delicate and mild, baby bok choy cooks up quickly and brings a nice texture to stir-fries, brothy soups, or noodle bowls.

Cosmic Crisp Apples - Bellewood Farms, Lynden, WA - A mix between Honeycrisp and Enterprise, Cosmic Crisp is simply a win of an apple! It has great texture, flavor, sweetness, and juciness; is disease resistant; and the trees bear fruit annually (opposed to alternate years, as with Honeycrisps).
