Yellow Potatoes, Hayton Farms, Mount Vernon, WA - Boil ‘em, mash ‘em, put ‘em in a stew… my favorite is to chop, boil until fork-tender, and sautee in a breakfast hash or bake until beautifully golden. Crispy on the outside and creamy on the inside, this is a perfect potato!
Carnival Squash, Hedlin’s Family Farm, La Conner, WA - A cross between acorn and sweet dumpling, this squash is a classic in the making. It has a nutty, sweet, and buttery flavor profile — plus, the skin is edible!
Gold Bunched Beets, Ralph’s Greenhouse, Mount Vernon, WA - These golden beauties have a milder, slightly sweeter flavor than red beets and won't stain your cutting board. Perfect for roasting or slicing raw into salads. Bonus: the beet greens are also edible and packed with nutrients!
Leeks, Ralph’s Greenhouse, Mount Vernon, WA - A milder cousin of onion and garlic, leeks add a sweet, oniony flavor that give depth to any meal. Use them anywhere you’d use alliums, or try them on their own! Save the dark leafy tops for use in homemade stock.

Fennel, The Crows Farm, Mount Vernon, WA - A farmer’s favorite, this veggie has a very mild anise flavor. The entire thing can be eaten raw, sauteed, roasted, or in soups. Thinly slice the bulb and marinate in a vinaigrette before tossing in a salad, sauté it for a pasta accompaniment, or roast wedges for a side dish. Don’t toss the tops — chop ‘em up for an aromatic garnish!
