Rainbow Carrots, Boldly Grown Farm, Bow, WA - These vibrant carrots are packed with antioxidants and bring a touch of color and sweetness to your plate! Try them raw, roasted, or in a fresh salad for an extra pop of flavor.

Yellow Potatoes, First Cut Farm, Mount Vernon, WA - Boil ‘em, mash ‘em, put ‘em in a stew… my favorite is to chop, boil until fork-tender, and sautee in a breakfast hash or bake until beautifully golden. Crispy on the outside and creamy on the inside, this is a perfect potato!

Red Beets, Ralph’s Greenhouse, Mount Vernon, WA - Earthy and naturally sweet, red beets shine roasted, shaved raw into slaws, or blended into vibrant soups.

Leeks, Ralph’s Greenhouse, Mount Vernon, WA - A milder cousin of onion and garlic, leeks add a sweet, oniony flavor that give depth to any meal. Use them anywhere you’d use alliums, or try them on their own! Save the dark leafy tops for use in homemade stock.

Parsley, The Crows Farm, Mount Vernon, WA - Great flavor and pleasant texture, sweeter and less stringy than the curly stuff! Try making a chimicurri, tabbouleh, or use as a garnish on just about any dish.

Mixed Radicchio, The Crows Farm, Mount Vernon, WA - Radicchio provides a unique flavor that is bold, delightfully bitter, and slightly spicy. Add it raw to a salad with mild and sweet fixings to complement its bitter notes, or try it cooked to create a mellow, pleasant, yet complex flavor profile.

Mini Spaghetti Squash, The Crows Farm, Carnation, WA - This squash is a fun, low-carb, gluten-free alternative to spaghetti. Cut in half, scoop out the seeds, poke holes in the skin, roast at 400°F for 30-40 minutes cut side down, then use a fork to fluff the strands. Then, add any sauces or toppings of your choice, and that’s it!

Kale Raab, Westwind Organics, Carnation, WA - Raab is the flower shoot that forms on overwintered brassicas — kale, broccoli, arugula, etc. It is a vegetable ephemeral, similar to daffodils or crocuses. This beauty is great when cooked: in soups, stir-frys, pasta, risotto, or pizza. I love it sauteed with a splash of lemon juice!

PNW FRUIT SHARE

Orin Apples, Bellewood Farms, Lynden, WA - Juicy and sweet, this apple is described as tasting pear-like with hints of pineapple. Great for snacking or in salads.
