Sweet Carmen Peppers - Broomstick Farms, Everson, WA - With a crisp texture, delicate sweetness, and slight hint of earthiness, these peppers are an excellent addition to salads, grilled dishes, or as a raw snack.
Rainbow Swiss Chard - Four Elements Farm, Puyallup, WA - Vibrant and tender, rainbow chard adds a splash of color and a mild, earthy flavor to sautés, soups, or fresh salads. Don’t toss the stems—they’re delicious too!
Fennel - Ralph’s Greenhouse, Mount Vernon, WA - A farmer’s favorite, this veggie has a very mild anise flavor. The entire thing can be eaten raw, sauteed, roasted, or in soups. Thinly slice the bulb and marinate in a vinaigrette before tossing in a salad, sauté it for a pasta accompaniment, or roast wedges for a side dish. Don’t toss the tops — chop ‘em up for an aromatic garnish!
