Broccoli - Farias Farm, Burlington, WA - Packed with both nutrients and flavor, who doesn't love this crunchy green veggie? Roast it with garlic and olive oil for crispy florets or toss it into stir-fries for a quick and nutritious dinner. Bonus: the stems are great, too—just peel and slice!

Baby Bok Choy - First Cut Farm, Mount Vernon, WA - Delicate and mild, baby bok choy cooks up quickly and brings a nice texture to stir-fries, brothy soups, or noodle bowls.

Yellow Potatoes - First Cut Farm, Mount Vernon, WA - Boil ‘em, mash ‘em, put ‘em in a stew… my favorite is to chop, boil until fork-tender, and sautee in a breakfast hash or bake until beautifully golden. Crispy on the outside and creamy on the inside, this is a perfect potato!

Jalapenos - Hedlin Farm, La Conner, WA - These mild peppers have a slight sweetness with tangy and earthy undertones. Try them pickled, in your salsa verde, or stuff with cheese and bacon for a fun appetizer!

Tomatillos - Hedlin’s Family Farm, La Conner, WA - Also known as the Mexican husk tomato, these beauties are tangy, slightly tart, and citrusy, with a hint of sweetness. Try making a salsa verde to add to enchiladas, soups, stews, as a companion to beans, and more!

Fennel - Ralph’s Greenhouse, Mount Vernon, WA - A farmer’s favorite, this veggie has a very mild anise flavor. The entire thing can be eaten raw, sauteed, roasted, or in soups. Thinly slice the bulb and marinate in a vinaigrette before tossing in a salad, sauté it for a pasta accompaniment, or roast wedges for a side dish. Don’t toss the tops — chop ‘em up for an aromatic garnish!

Sweet Onions - Spring Time Farm, Everson, WA - This mild onion cultivar is perfect raw in salads and relishes, chopped as a garnish, or sauteed.

Red Cabbage - Westwind Organics, Carnation, WA - Smaller and denser than green cabbage, this variety has a peppery taste which becomes sweeter and softer when cooked. Use it raw in salads or coleslaw, or try spicing or braising it as a savory accompaniment.
