Baby Bok Choy, First Cut Farms, Mount Vernon, WA - Delicate and mild, baby bok choy cooks up quickly and brings a nice texture to stir-fries, brothy soups, or noodle bowls.
Yellow Potatoes, First Cut Farms, Mount Vernon, WA - Boil ‘em, mash ‘em, put ‘em in a stew… my favorite is to chop, boil until fork-tender, and sautee in a breakfast hash or bake until beautifully golden. Crispy on the outside and creamy on the inside, this is a perfect potato!
Delicata Squash, Hopewell Farm, Everson, WA - This squash is known for being naturally sweet, mild, and creamy. The squash has a thin, edible skin, making it easy to cook!
Purple Carrots, Ralph’s Greenhouse, Mount Vernon, WA - These vibrant carrots are packed with antioxidants and bring a touch of color and sweetness to your plate! Try them raw, roasted, or in a fresh salad for an extra pop of flavor.
Bunched Leeks, Ralph’s Greenhouse, Mount Vernon, WA - A milder cousin of onion and garlic, leeks add a sweet, oniony flavor that give depth to any meal. Use them anywhere you’d use alliums, or try them on their own! Save the dark leafy tops for use in homemade stock.
Daikon Radish, Spring Time Farm, Everson, WA - These have the same texture and crunch as a red radish, but with a mellower flavor. Can be eaten raw or cooked.
Fennel, The Crows Farm, Mount Vernon, WA - A farmer’s favorite, this veggie has a very mild anise flavor. The entire thing can be eaten raw, sauteed, roasted, or in soups. Thinly slice the bulb and marinate in a vinaigrette before tossing in a salad, sauté it for a pasta accompaniment, or roast wedges for a side dish. Don’t toss the tops — chop ‘em up for an aromatic garnish!
